Catelli's Ravioli
From Diners Drive-ins and Dives
Ingredients
- Parmesan cheese
- Eggs
- Shredded mozzarella
- 1/3 Beef, 1/3 Pork, 1/3 Veal ground meat
- Ricotta Cheese
- Eggs
- Flour
Filling
Pasta
Instructions
- Mix with meat.
- Blend cheeses and eggs.
- Brown ground meat with a little chopped onion and garlic.
- Boil til al dente.
- Use fork to seal edges.
- Cut them apart.
- Fold the pasta over the top.
- Pipe filling in small balls about an inch apart.
- Roll out flat and thin.
- Mix pasta.
