Salmon Or Corn Patties
Like mom used to make!
Ingredients
- Oil (in skillets)
- 1 1/2 c. cracker meal (or crushed saltines)
- 2 eggs
- 1 can creamed corn
- OR
- 1 (14 1/2 oz.) can salmon
Instructions
Salmon:
- Stir.
- Add approximately 1/2 cup cracker meal.
- Add 1 egg.
- Blend with a fork.
- Empty into medium bowl and remove skin and bones.
Corn:
- Serve with salad and fruit.
- Yield approximately 12 salmon patties and 18 corn patties.
- When bottoms brown, flip (and flatten salmon)
- Spoon into skillets (can use an ice cream scoop with salmon).
- Cook in separate skillets on medium heat.
- Add remaining cracker meal, stir.
- Stir in 1 egg.
- Empty into separate bowl.
Notes
Yield approximately 12 salmon patties and 18 corn patties.
Serve with salad and fruit.
