The Clean Eating Dr. Wilbur Salad
Ingredients
Salad
- 1/4 cup sunflower seed
- 1/4 cup raw pumpkin seeds
- 1/2 cup chopped, raw mushrooms
- 1 medium carrot, grated
- 1 cup shredded broccoli
- 2 cups spring mix
- 2 cups raw spinach
Pear Vinaigrette Dressing
- 2 tablespoons oil (any light flavored oil will do)
- 1 clove garlic (2 if you like a strong garlic flavor)
- 1 teaspoon dijon mustard
- 1 tablespoon balsamic vinegar
- 1 medium pear
Instructions
- Pour over salad and serve.
- Combine all your dressing ingredients in a blender and blend until smooth.
- Mix all your salad ingredients together in a bowl and set aside.
Notes
You can use any vegetables you happen to have in your fridge. Dr. Wilbur’s point in discussing salads was that we can get a whole lot more veggies into our eating plans if we dump as many veggies as we can into a salad. So load up! The above list is just a suggestion.
