Manicotti Formaggio
Manicotti filled with ricotta, mozzarella and parmesan cheese, served with sauteed chicken tossed with spinach and roasted bell peppers in a parmesan cream sauce.
Manicotti Formaggio with Shrimp
Manicotti filled with ricotta, mozzarella and parmesan cheese, served with sauteed shrimp tossed with roma tomatoes and scallions in a carbonara sauce with parmesan and pancetta bacon
Ingredients
Meat and Marinade
- 1/4 lb. chicken strips or shrimp
- 1 cup italian dressing (approx)
Manicotti
- 1 egg, lightly beaten
- 1 3/4 cups Ricotta Cheese
- 1 1/2 cups shredded Mozzarella cheese
- 1/2 cup grated parmesan cheese
- 12 manicotti shells, cooked and rinsed in cold water
Shrimp Carbonara Sauce:
- 1 cup of butter
- 1 1/2 teaspoon chopped garlic
- 3 tablespoons flour
- 1 cup grated Parmesan cheese
- 4 cups heavy cream
- 4 cups milk
- 6 Roma tomatoes, diced
- 6 slices of bacon, cut into small pieces
- small bunch of scallions
Instructions
- The process is the same as the above recipe. Just leave out the bacon completely and substitute spinach for the tomatoes and use roasted red peppers instead of scallions
- Make the Chicken and Spinach Cream Sauce
- Add flour, parmesan cheese heavy cream and milk. Use a wire whisk to whip all ingredients together. Bring to a boil. Reduce heat and allow to simmer. Add manicotti to pan to heat the cheeses. Serve with shrimp and chopped scallions.
- Melt butter in a large sauce pan over medium heat. Add garlic and bacon and shrimp. Saute for 5 minutes. Remove Shrimp.
- The Olive Garden Recipe also calls for shrimp, roma tomatoes, and scallions.
- Carbonara is an Italian dish based on parmesan cheese, eggs and cured fatty pork. Pancetta is used but bacon can be substitued. Cream is sometimes added in some carbonara recipes.
- Make the Shrimp Carbonara Sauce
- NOTE: You can always substitute frozen manicotti. Cook according to package directions and then just drop into the sauce. In a hurry, just use spaghetti or linquine
- Fill manicotti shells by squeezing the cheese mixture into both sides of each shell.
- Spoon cheese mixture into a large ziploc bag. Snip off a small bit of of one of the bottom corners of the bag.
- Make The Manicotti
- Cover the meat with Italian Salad dressing and refrigerate for at least 30 minutes.
- You will need 1/4 lb of chicken strips or shrimp which has been peel and devained.
